Lemon Rice

 

2 cups Brown Rice

1 tbsp Fresh Lemon Juice

2 tbsp Minced Fresh Parsley (optional)

1 tbsp EVOO

Instructions:

Cook rice according to package instructions.  When done, toss parsley, olive oil, lemon juice, 1/4 tsp salt, and 1/4 tsp pepper.

Note:

Good with salmon.
